Elderflower has probably been an ingredient since the day we starting blending lambic. To give things a twist, we went on the lookout for a spice that is highly congruent with the aromatics of an elderflower blossom. Timut pepper would become that spice. Related to Szechuan pepper, Timut is grown and harvested in the high mountains of Nepal. It gives off a highly aroma reminiscent of all sorts of agrume fruits. We ended up blending several lambics (1-2years) with this pepper and accompanied it with a small portion of elderflower, just to elevate it enough. [1]
