This Speling van het Lot is a particular kind of lagering and maturation… on amphoras rather than the typical French oak barrels and foeders. The lambik brew of the 17th of March 2022 went on two different amphoras. These amphoras were crafted in France in two different regions and by two different crafters, rendering a different porosity and degree of oxidation. While bottling, the weighted average age of the blend was moren than 21 months. All of the cereals were sourced in Pajottenland.
