3 Fonteinen Druif - Grolleau
Description
Druif Grolleau is made in collaboration with Domaine des Hauts Baigneaux, a small and renowned organic wine maker from Azay-le-Rideau, in between the cities of Chinon and Tours, in the Loire region of France.
For this iteration, the must was macerated for one month on its own skins before macerating for almost 4 months. For this, a 4-year-old lambic was used. The weighted average age of this blend is more than 40 months old and the final fruit concentration is 325 g/L.
