There is nothing quite like summer such as munching on blackberries, freshly picked from a bush on a hot August day, while walking through the country side. Our blackberries are homegrown just a short ten minute walk from the brewery. We usually harvest during the first weeks of August when the berries are just ripe, exploding with flavor and sugars, a perfect sweet sour balance. As ever, fully organic and hand picked, they are added to a tank of lambic of at least one year old the same day. This guarantees the best possible transfer of blackberries aroma to the beer. | |||
We aim for 350 gram of fruit per liter of beer. After at least six months of maturing and fermenting in a stainless steel tank and a second fermentation in the bottle for another six months, we get a feels like summer bright red color with some pinkish tones. A pleasant acidity is matched with the typical lambic flavors and the blackberry aroma comes through very nicely. | |||
