Under our motto "May it be something more," and as we hinted a few days ago at the previous batch, we're now releasing several batches of mead in collaboration with Jorre Vanhemmens of De Mederie. Jorre has been a good friend/colleague for years and a former local. The first batch, the "Lambiek & Mede Parel Cassis," is macerated with blackcurrant berries. During the blending process, we achieved a ratio of 60% lambic to 40% mead, with a robust maceration. Here too, we worked with lambics aged 1, 2, 3, 4, 5, and 6 years, from four lambic breweries in the Zenne Valley. This combination resulted in a beautiful and balanced hybrid lambic/mead that packs a serious punch at 11.2% ABV. While most lambic beers are refreshing and thirst-quenching on summer days, this one can be quite pleasant during these winter days and New Year's festivities. <ref name = Geert_Demuynck> Geert Demuynck - Facebook (English) </ref> | |||

Publitasting Parel Cassis is a blend of 60% lambic and 40% mead, made in collaboration with De Mederie.
