Lambic Jaune is the first experiment with Vin Jaune barrels from During the Jura region of France received in late 2011. It occurred sometime in -2012. For this first experimentbrewing season, Jean filled received a single freshly emptied and uncleaned Vin Jaune barrel with wort from the brewing seasonStephane Tissot from France. The lambic matured For this initial experiment, Jean placed wort directly into the uncleaned barrel for a maturation period of approximately two years and was bottled. This experimental batch was bottled but never released, though some bottles were used at a dinner for cooking purposes.
