This beer is the first experimental trial of Gueuzérable. It is a blend of 1, 2, & 3-year-old lambics aged on oak barrels with the addition of organic Maple syrup locally bought at Colruyt (0.075L of syrup per liter of lambic), a belgian supermarket chain. It was bottled on March 8th, 2016.

For this first trial version, Pierre ordered the syrup later than expected in the season and got late harvest syrup, darker but also "less pure" than other grades (meaning other non-sugar natural compounds can be present). He later switched to more delicate syrup harvested earlier for the first official release sold to-go, but the taste being less pronounced, he switched back to darker late harvest syrup.
 
Fermentation to get all the sugar from the syrup to be fermented was about 6 months, and additional syrup was added for refermentation in the bottle.  
 
Limited to 36 bottles and served only at the tap room of the blendery.

Description

This beer is the first experimental trial of Gueuzérable. It is a blend of 1, 2, & 3-year-old lambics aged on oak barrels with the addition of organic Maple syrup locally bought at Colruyt (0.075L of syrup per liter of lambic), a belgian supermarket chain. It was bottled on March 8th, 2016.
