The idea for this unique blend came from Roel Janssens from Rock & Roell Experience (also owner of the café "Fiets‑ & Wandelcafé Paddenbroek" in Gooik), who worked on the blend with Jo and Jozef of Lambiek Fabriek. It is marketed under the Brett House Janssens brand.

Pajottegem refers to the new name (inspired by the region of Pajottenland, known for the lambic tradition) of a municipality in the province of Flemish Brabant in Belgium, that officially came to be on January 1st, 2025; merging the towns of Herne, Galmaarden and Gooik.
