History / Side Notes
The recipe was carefully crafted for the restaurant by Jeno Del Turco, chief-sommelier of the restaurant et "meilleur sommelier de Belgique" (best sommelier of Belgium). The elderberries and elderflowers were harvested from the Soignes forest right in front of the restaurant (which operates under a zero-waste philosophy and try to source local ingredients as much as possible).
