This Pruim features the Belle De Louvain, an ancient plum variety, popularly known in Brabant and Limburg province as Paterskloten and Hondskloten respectively. We sourced both these at Hoenshof in Limburg and at Willy’s orchard on the Wijngaardberg around Rotselaar. We macerated the entire plums for almost five months on lambik from five different barrels and five different brews. Finally, we blended with some young lambik before bottling. Final fruit intensity is 380 grams of Belle De Louvain plums per litre of Pruim. 100% 3 Fonteinen.

This Pruim features the Belle de Louvain variety, an ancient plum, popularly known in Brabant and Limburg province as Paterskloten and Hondskloten respectively. We sourced these at Hoenshof in Limburg.
We macerated the entire plums for almost five months with a young lambik on a single ex-Bordeaux barrel. Finally, we blended with more young lambik before bottling.
Final fruit intensity is 480 grams of Belle De Louvain plums per litre of Pruim. 100% 3 Fonteinen brewed lambik
3 Fonteinen Pruim is the slow and all-natural maceration of hand-picked whole plums or zwetschgen on traditional lambik. No addition of juices, syrups or artificial sweeteners. Unfiltered. Unpasteurised.

For this Pruim, we used the old plum variety Belle De Louvain, hand-picked in Limburg, Belgium.
Maceration took almost four months and the lambics for both maceration and blending originate from six different barrels and thirteen different brews, of which the oldest brewed end of October 2018. The weighted average age of this fruit blend is almost 22 months.
The final proportion of fruit used is 385 grams of plums per litre of Pruim. Almost half of the cereals used originate from the Pajottenland. 100% 3 Fonteinen brewed lambic.

For this Pruim, we macerated Belle De Louvain plums, an old local variety of kwets or Prune plums. We hand-picked them in the summer of 2021 in the orchard of Willy - a retired school teacher - located at the Wijngaardberg in the province of Vlaams-Brabant.
Maceration took over five months and we used two- and three-year old lambics only. We blended with more old lambics and a small part of young lambics to reach a fruit intensity of 340 grams of used plums per litre of finished Pruim. The weighted average age of this blend upon bottling mounts up to 25 months.

For this Pruim, we macerated hand-picked Limburg Belle De Louvain plums for four months on a blend of young lambik, as well as three-year and four-year-old lambikken. The oldest lambik has been brewed by ourselves in the first days of 2019. The weighted average age of this blend upon bottling was more than 31 months. The final fruit proportion is 300 grams of Belle De Louvain plums per litre of Pruim. More than two thirds of the lambikken were brewed with Pajottenland cereals, sourced from our own Cereal Collective.
