Description
Cantillon Berce is a lambic made with Grande Berce, the French name for the common hogweed (Heracleum sphondylium), an herbecious perennial plant from the carott family, native to most of Europe, western Asia and northern Africa, but also introduced in North America and elsewhere.
Not to be mistake with Berce du Caucase (Heracleum mantegazzianum), a poisonous, invasive plant of the same family, looking similar but growing much higher (up to 4 meter).
History / Other Notes
The idea came from Jean Van Roy having dinner at the restaurant Bouchéry in Brussels, where he tasted butter and ice cream made with an hogweed infusion which he found very original with unusual aromatics.
