Description

Cantillon Lambidre Fermier de Bruxelles was a lambic aged on sour apples produced in the late 1980s in collaboration with Yvan De Baets of Brasserie de la Senne (way before the brewery was created). The apples were sourced from a tree in the garden of Yvan's parents.[1] When asked about it in 2025, Jean Van Roy said quantities were probably similar to other fruit infusions they do, so about 300 g/L. Though it wasn't terrible, it wasn't particularely good and the beer was thrown away and never poured anywhere, not even at the brewery.

Side Note

In 2015, Jean Van Roy discussed this beer in an interview on The Sour Hour (Basic Brewing Radio) podcast, in which he said "the beer was not so bad, but we gave to the beer a crazy name. So in cider, traditional cider in french, I call it Cidre Fermier, so cider from the farm. And we gave the name to this beer, Lambidre Fermier. It was totally crazy. The beer was not so bad, it was my first Zwanze if you want".
