Open: The bar / restaurant is open on every first Sunday of the month from 11AM to 7PM. On these first‑Sunday openings, you can drop by for drinks (cocktails, beers, geuze/kriek, etc.), food, and — if available — a Full Tour & Tasting (typically starting at 2PM). Shop to purchase is open almost every day but it is advised to call ahead to ensure someone is present. Tours & tastings can be required for groups by appointments.
Overview
De Cort is a family-run farm distillery in Pepingen, in Belgium’s Pajottenland region. Since 2014, they have been producing spirits using their own locally grown raw materials.
They use traditional copper Holstein stills and focus on craftsmanship, quality, and a short farm-to-bottle supply chain.
Originally, their main focus was on spirits like whisky, gin, vodka, and brandy, but having the equipment at hand (used to brew beer that would later be distilled) and being located in the Pajottenland made it logical to extend to brewing lambic in 2021, after installing a coolship. Beside traditionnal lambic, they also experiment with hybrid blends and their own barrels.

The current farmstead in Pepingen was purchased in 2011 and the project by Manu De Cort and his family started taking shape in 2013, with an official start in 2014 and a first launch of various spirits in 2015.
