This Pruim features the Belle De Louvain, an ancient plum variety, popularly known in Brabant and Limburg province as Paterskloten and Hondskloten respectively. We sourced both these at Hoenshof in Limburg and at Willy’s orchard on the Wijngaardberg around Rotselaar. We macerated the entire plums for almost five months on lambik from five different barrels and five different brews. Finally, we blended with some young lambik before bottling. Final fruit intensity is 380 grams of Belle De Louvain plums per litre of Pruim. 100% 3 Fonteinen. | |||

Maceration took almost four months and the lambics for both maceration and blending originate from six different barrels and thirteen different brews, of which the oldest brewed end of October 2018. The weighted average age of this fruit blend is almost 22 months. | |||
The final proportion of fruit used is 385 grams of plums per litre of Pruim. Almost half of the cereals used originate from the Pajottenland. 100% 3 Fonteinen brewed lambic. | |||

“Belle de Louvain” (used in these particular blends described here) is an ancient variety of Belgian origin, discovered in 1845 in the nursery of Mr. Van Mons in Louvain. The fruit is large and purple, rustic with a ferm and yet juicy flesh, and the tree blooms late, helping to avoid late spring frosts and producing good yields. The good resistance to fresher environments helped establish this plum in Belgium. | |||
